RED WINE
Merlot is the second leading red varietal after Cabernet Sauvignon purchased by Americans today, according to the Wine Insititute, the public policy advocacy association of California wineries.
 
Merlot pairs well with a wide range of food. Try it with full-flavored cheese (such as blue, Camembert, cheddar, or Gouda), beef, lamb, pork, chicken, and turkey as well as salmon and tuna. It's also a good match with chili and pizza, as well as dark chocolate and berries to top off the meal.

Priced at $3,000, only 125 bottles will be available in the U.S.  Contains a blend of 100 eaux-de-vies stretching back 60 to 70 years. Equally impressive is the presentation-the crystal  decanter, made by  Baccarat craftsmen, features a stunning crystal stopper inspired by the legend of Napoleon's ten signet rings, which were bestowed upon favored military commanders who had committed noble acts. L'Essence is part of Couvoisier's Connoisseur Collection, which also includes two  age declaring  bottles a 12-year (Courvoisier 12) and a 21-year (Courvoisier 21).

CHAMPAGNE COCKTAIL BASICS

Chill your sparkling wines. Keep them about 42-45 degrees F.
 
Don't use cheap sparkling for cocktails. Good ingredients make a good drink. Don't use the highest end sparkling either. Drink your Dom straight.
 
As most sparkling wine drinks are on the sweet side, use a dry sparkling (aka Brut).
 
Chill the glas (flute) ahead of time. Sparkling wine likes to be served chilled.
Pour small amounts of sparkling in at a time to prevent foam over. Repeat until the glass is filled.

5 cloves                                    
2 lemon slices                           
2 oz. whiskey                             
1 oz. freshly squeezed lemon juice
2 teaspoons honey or sugar syrup, to taste
3 oz. just-boiled water
1 cinnamon stick, to serve (optional)
 
Skewer the cloves into the lemon slices and put them in a heatproof glass. Add the whiskey, lemon juice, and honey or sugar syrup to taste. Top up with boiling water and add a cinnamon stick to serve, if using,
